Pizza Dough without Pre-Baking

I love to eat pizzas with crispy but not so thin crusts and most of all…eat them while hot…fresh from the oven! After trying different pizza dough recipes and hoping one will turnout to what I wanted…finally, here it is!

This pizza dough can also be made whenever you have free time and kept frozen for a month. Just let the dough sit in the fridge the night before you plan to bake.

This recipe yields 4 of 12” pizza crust.

Ingredients:

  • 1.5 tablespoons active dry yeast
  • 6 tablespoons sugar (2 tablespoons for yeast)
  • 2 cups warm water (for yeast proofing)
  • 6 cups all purpose flour
  • 1 teaspoon iodized salt
  • 4 tablespoons olive oil (or any neutral tasting oil)

Procedure:

  1. Proof the yeast by mixing the yeast with sugar and warm water. Set aside for about 5 minutes.
  2. Combine the flour with all the ingredients except the yeast mixture (by hands or by dough attachment in your machine).
  3. Once all ingredients are evenly combined, pour the yeast mixture into the flour and continue mixing until dough is not too sticky and now workable.
  4. Lightly brush the dough with oil and cover with cling film or kitchen cloth. Leave for an hour to let the dough rise (until doubled or tripled in size).
  5. After the dough has risen, punch it down and divide into 4 portions.
  6. Prepare your pizza pan by generously brushing the pan with olive oil.
  7. Spread one pizza dough in the prepared pan. To avoid the dough from springing back, let it rest for 10-15 mins and spread again if needed.
  8. Lightly brush the top with olive oil.
  9. Your dough is now ready for your favorite toppings!
  10. Bake at 200C/400F degrees for 15-20 mins in your preheated oven.
